Directions
1. Measure ½ cup (about 80g) of cornmeal for porridge or ⅓ to ½ cup (50–80g) for a side dish. 2. Bring 3 cups of water or broth to a boil. 3. Slowly whisk in the measured cornmeal. 4. Reduce heat to low and simmer, stirring frequently, until the desired consistency is reached (about 20-30 minutes for porridge, 10-15 minutes for a side dish). 5. For a firmer texture, add more cornmeal; for a softer texture, add more liquid. 6. Season with salt and pepper to taste. 7. Serve hot, or let it cool and slice or fry for later use.
