The interior kernel has the same grooved surface as the walnut but is somewhat more even and oval in form. The nut itself is creamier in colour, while the skin is a warmer, lighter brown. It works well in both savoury and sweet recipes, the most renowned of which being pecan pie, a southern staple. The pecan's peculiar flavour and texture are due to its high quantities of monounsaturated oil - it is, after all, the fattiest of all nuts.
